You want to grill chicken breasts in 4-ounce servings. And prepare your mouthwatering salad and homemade dressing while the chicken is cooking.
Homemade Salad Dressing
In a large salad bowl, mix the following ingredients:
- 4 tablespoons of freshly squeezed lemon juice
- 1 clove of minced garlic
- 3 tablespoons of fresh minced parsley
Whisk the ingredients together.
I love to make a different salad every time to keep it interesting. In the photo, my salad consists of:
- 2 cups of fresh greens spring mix
- half a seeded and diced cucumber with the skin on
- half a diced red bell pepper
- half a diced red onion
Love those colorful, crunchy veggies! Once your salad ingredients are prepared, add all the diced vegetables to your salad dressing bowl and stir until they’re well-mixed. Then, pour the vegetable-dressing mix over the bed of greens and add a tablespoon of lemon juice over everything.
Add your grilled chicken breasts to the side of the salad, serve, and enjoy! It’s scrumptious, especially when all the juices run into the chicken! You can always add olives for a healthy fat if you’d like.
