Preheat oven to 350 degrees and combine the following ingredients in a large mixing bowl:
- 2 1/2 cups oat flour
(if allergies, may use non-gluten flour)
- 2 cans of Pumpkin 100 Percent Pure 15oz
- 1/3 cup of almond milk
(if allergies, may use rice or soy milk)
- 2 tbs of real vanilla
- 1/4 cup brown sugar
- 1 tsp baking powder
- 1 tsp baking soda
- 1 tbs of ground cinnamon
- 4oz Sweet Nibs Cacao
- 2 tbs pumpkin pie spice
- add raisins (optional)
Mix all ingredients. Coat muffin or bread loaf pan with coconut spray. Bake for approximately 30 minutes, or until done. Makes 12 mouth-watering muffins or one loaf of scrumptious pumpkin spice bread. Enjoy with your favorite hot beverage!
