Meet Tuned In Parent Deanna Carney! Recently, she has gone from stay-at-home (SAHM) mom to work-at-home mom (WAHM) and welcomes the challenge! For years as a SAHM, Deanna enjoyed her children’s many stages and milestones, particularly spending time with them at their favorite hangout spot: the park. The good life, right? Well, it couldn’t have been all fun and games; SAHMs work, too, 24/7, in fact; but there’s nothing wrong with being shamelessly happy about it.

Yet, along with a growing number of SAHMs, Deanna was also industrious and needed an outlet. With a passion for cooking, a knack for networking, and an understanding of nutrition, she was on the hunt for something that suited her. As it turned out, being a food consultant for Sunset Gourmet was her “ah-ha” moment.

She’s rather enthusiastic about her job, which is pretty amazing for a former SAHM with Deanna’s skill set. As a food consultant, she’s her own boss, meaning she doesn’t miss any of those stages and milestones or outside time with the kids, and, let’s face it, it’s just nice being your own boss. Also, since Deanna is social, loves to cook, and is health-conscious, she chose to be a food consultant because she gets to share recipes and teach cooking workshops to families with products that are MSG-free and 75% of which are gluten-free. (I’m allergic to MSG and my daughter is allergic to gluten, so we’re sold!)

imageDeanna says, “I want to share with you simple, amazing tasting dishes for everyday meals.” And she really does! Today she shares with us her mouth-watering Tex-Mex Quinoa recipe that you’ll love!

Tex-Mex Quinoa

  • Sunset Sun Dried Tomato and Basil Quinoa
  • 1 can corn drained
  • 1 can black beans drained and rinsed
  • 1 tomato diced or 8-10 cherry tomatoes cut in half
  • fresh cilantro
  • 3 tbsp lime juice
  • 1/4 cup olive oil
  • 1 tsp Oh So Onion
  • 1/2 tsp Sunset Garlic Pepper with Lime
  • 1/2 tsp ground cumin

Prepare quinoa according to package and let it cool. Mix quinoa, corn, black beans, and cilantro together in a large bowl. In a separate bowl, whisk oil, juice, and seasonings together. Pour over quinoa mixture. Add tomatoes and refrigerate. Best if sits 30 minutes before serving.
