Fun and Healthy Chicken Quesadilla


Add some spice to your summer! If you’re running on fumes in the creativity department when it comes to snack options, here’s a fun one that’s sure to add some kick to your routine. This quesadilla is easier to make than you’d think, provides a healthy balance of whole grain and protein, and though it’s low in fat, the taste certainly won’t give that away!

If you’re grilling out, add this to the menu and enjoy a healthy summer-alternative to hot dogs and burgers, or prepare it on the stovetop and sizzle up snack time. Either way, get the kids to chip in. It’s a fun, quick dish to whip up, and it’s sure to have them begging for more!

  • 1/4 teaspoon chili powder
  • 1/4 teaspoon paprika
  • 1/4 teaspoon onion powder
  • Pinch of garlic powder
  • Pinch of ground cumin
  • Pinch of salt
  • 2 ounces boneless, skinless chicken breast, trimmed of visible fat
  • 1 whole-wheat flour, 96% fat-free tortilla
  • 1/2 cup finely shredded Cabot 75% Light Cheddar Cheese

Preheat the grill to high heat. In a small bowl, combine and mix all spices. Rub the mixture evenly over the chicken. Cover with plastic wrap and refrigerate for 10 minutes for flavors to blend.

imagePlace the chicken on the grill and lower the heat to medium (If it’s not possible to reduce the heat, sear the chicken quickly on both sides and then move away from direct heat.) Grill the chicken for 2 to 4 minutes per side or until it’s no longer pink and the juices run clear. Set aside for about 10 minutes. Chop the chicken coarsely.

Preheat a medium nonstick skillet over medium heat. With an oven mitt, briefly remove it from heat and mist with olive oil spray. Lay the tortilla in the pan and cook for 30 seconds. Flip the tortilla and evenly scatter cheese over half the tortilla. Top with the reserved chicken. With a spatula, fold the tortilla in half over the filling. Cook for 2 to 4 minutes or until it starts to brown in spots. Flip and cook other side 2 to 4 minutes or until the bottom starts to brown in spots and the cheese is melted.

Serve immediately by itself, or with salsa and/or low fat sour cream. Dig in and enjoy!
